How do I choose the right bit for my horse?

Maia is really young and the only thing she has been ridden with is a snaffle. I ride her in a tomthumb but its really harsh on her, she jerks her head around and is stubborn to listen. I barley know anything on bits so I used what we had (which isn't much).

Also I am saying how do I get her softer in the mouth with her bit?
