How to get a Racking Horse to Canter or Gallop..

Yup that's the question.. I have an 11 year old Spotted Racking horse mare. She was show trained and shown in Padded classes we found out.
So.. I'm retraining her for trail and fun. Its doing great so far, she still puts her head up REALLY high. But once she figures out that its ok to relax she does.
But I'm just wondering how can I start working with her on Cantering and Galloping with out FREAKING OUT. I want to get her to canter or go in to a gallop from a walk. So If any of you out there know what I can do to suceed at this please let me know!
