Getting a horse desensitized to touch doesn't make your training abilities superb or enough to break a horse, IMO. I got that far with my gelding and then called in a professional for help. It was a GREAT help, and I only regret not getting my trainer's help sooner- I would've had a LOT less injuries.
As for being hyper, he is just three years old. There's calming supplements and aids you can use if you wish, though.
All in all, get help before you get hurt. I have the injuries and the scars to prove my own similar mistakes.
