Each division is made up of 3 classes...2 over fences, and one under saddle aka a flat class. In the flat class, you will be asked to walk, trot and canter each way. Each class will ribbon individually, and then the division will have a champion and a reserve champion.
Like you have asked about in other threads, a hunter needs to go around the course in a balanced canter, getting the desired strides per line, while having style over the fences.
Since you are saying you haven't shown before, you should maybe try the pre-greens. That division is for horses that are still new to the whole deal, and would be a good way to get the experience in the hunter ring, without the jumps being too big.
