Slowing Down

Slowing down from the sitting canter has always been my biggest problem. In fact, the sitting canter is my least favorite gait.
Anyways, I've mastered the sitting canter slowing down on the lesson horse I used to ride, but now I'm half leasing an awesome OTTB and after our first lesson, the problem was the canter.
Although, his canter is really different, and I did loose my stirrup about four times so that may of made the canter not so great. But back to the point, I do not like the sitting canter. Whenever I feel uncomfortable at the sitting canter I just rise into half seat, which is a big problem because you have to sit the canter in equitation.
However, when I am comfortable at the sitting canter, everything goes really well. Whenever I move with the horse, etc. I can slow them down right away and keep a good, nice pace. But the problem is that I'm usually not comfortable at the canter.
Does anyone have any tips on how to become more comfortable in the sitting canter, and how to slow a horse down from the canter? Because when I was trying to slow Riley (my OTTB half-lease) he just put his head down until I had to lean back and pull on the reins with all of my strength.
It was our first lesson, but him putting his head down worries me. We eventually got the trot, but it was after about 10 seconds of me pulling.
Anyways, to sum it up - How should I slow Riley down from the canter?

What's helped me has been transition work - lots of trot-walk-trot and trot-halt-trot transitions. I needed to learn how to sit up, sit deep, and ask for a downward transition without giving away my legs and reins. I was told the basic method is the same, no matter what the starting gait is.
