Why would a horse drool when eating alfalfa?

I have alfalfa cubes, I'll break them up tiny and use them as treats.

Almost all of my horses mouths start foaming while they are eating them.

None acting sick or anything and quit pretty fast after.

Alfalfa cubes are rather difficult to chew, so the horse salivates more to help break them down more. My gelding used to get alfalfa pellets for lunch and, even though I'd soak them in water before feeding them, he always ended up with a green mustachio. It was adorable, especially when he'd really dig in and get it all the up his white nose to his nostrils.
