Over 40 Rider

I am an over forty rider and love to ride, I just recently started back to riding now that I have the time. With my schedule I can only ride once per week but I really want to ride more often. I have a great trainer/instructor but I think she feels that I want to ride for pleasure I actually want to eventually compete in competitions. Does anyone have any suggestions?

Tell her what your goals are. She won't know unless you say something.

You should discuss this with your instructor, any goals you have. Instructors need to know where you want to go and on the other side of this - you should feel free to discuss your progress with them.

However, I can tell you that regardless of what sport you compete in, if you want to compete, you and your instructor will need to approach lessons and practice differently than you would when you're learning a skill, meaning with more frequency and very focused on event and judging criteria.
