He's coming home!!!!
I am so excited my horse is coming home! No more getting a ride to the barn three times a week! No more having to cancel rides because we dont have time! But I have some many questions!
Should I worry about him meeting cows over the fence?
What types of toxic plants should I look out for?
Will he founder on a small paddock with green grass its mostly dirt and some kind of green round leaffed weed?
What Kind of shelter should I build?

I don't know about cows and bulls.

A dirt paddock is unlikely to support enough green stuff to cause founder. I'd be more worried about colic from a sudden change of diet. Does he get weeds at his old place? If not, I'd block off the greenest part of his paddock and let him onto the weeds for short periods of time, gradually increasing each day.
Shelter will depend on the weather you need to protect him from. If you have cold winters you probably want a run in. If you have mild winters and hot summers you may just need a shade.
Pick up this book. It sounds like you should be doing a little more research before you bring your horse maybe. I've been reading it and it has a lot of great info in it.

Congratulations! I wouldn't worry too much about the cows and bulls over the fence but you might want to keep a close eye on him for a while just to see how he will react to them (and they to him LOL). Our horses just have the trees for protection but I bet a nice 3 sided shed would be good to protect him from hail or whatever. Also, I really don't think he will founder just from the green grass. If he hasn't had the opportunity to eat green grass yet this year, just keep a close eye on him but I'm sure he will be fine. :D
