What color is your horse or the horse you're working with primarily? Are you talking cloth colors (i.e. saddle pad, boots, wraps, blankets) or tack (i.e. bridle, saddle and other leathergoods) colors?

Lime green & black (eyecatching, a bit trendy)
Red & black (super sharp!)
Hunter green and black (very classy)

I've found hunter green is the only color that looks good on pretty much any horse.

My cross-country colors are black, red, and gold. Because I use so little of the colors, it looks really snazzy on anything! I usually go with a black vest with red and gold laces, tan breeches, a red polo, and a black, red, and gold skull cap cover. Then black saddle pad with accents, black Woofs with red and gold tape, and that's pretty much it :)
