Every stride is just another jab in the mouth with lunge systems like that (I don't have experience with the Pessoa system myself, but in NZ the Kincade system is quite popular). The only lunge system I've used to any extent has been a chambon, which I found quite useful in encouraging a horse to stretch down and it can help build muscle along the back.
This is a quote I just found from another forum about the Kincade system. I would say that the horse in question moved like this because stretching forward appropriately was jabbing him in the mouth with each step. Quote:
