What bit for a racking horse?

Scarlet is a Spotted Saddle Racking X. The bit she came with is an Eggbutt Mullenmouth. And also, when I ride her English, we use your typical snaffle with D rings. My horse book mentioned how racking horses "brace" against their bit for balance when racking....but um....I didn't know this.

Any words?
