I'm glad you found a riding partner.
You don't have to ride her different than any other horse. The only difference being is she is probably going to be sensitive to your seat and leg cues. My mare will go off voice, leg and seat alone. She tends to like to be given constent structure, so she is not fond of being a lesson horse. Alas, every single horse is different and yours might get pissy with to much instructions.
Since she is just coming back to work after a long vacation I wouldn't do any spinning or stopping. If you don't know what your doing you can very quickly put bad habits on her or worsen old ones. Look for a local trainer to teach you how to ask her to do those things CORRECTLY.
