We ride against Murray State University in the IHSA shows, but I believe they have a rodeo team as well. I'm not sure if the school is know specifically for their horse program, but they have one of the better ones in the area. And their coach is pretty cool. That's in Kentucky. Middle Tennessee State University also has an excellent horse science program. They have a stock seat team, but I don't think they do rodeo.
Those are the only schools in the region that I have personal experience with. I would suggest checking out princetonreview.com
It has a search engine where you can fill out all of the criteria you're looking for, size, majors, athletics, region, etc., and it will give you a list of schools that fit what you're looking for. Should give you a better idea of what's out there.

College of Southern Idaho has one of teh best rodeo teams in the country. Utah State and Utah Valley State College have rodeo teams that are not bad. University of Wyoming has a good program and so does the college in Casper but I forget what it's called.

I don't know what all they have exactly, however I know there's quite a bit to offer at kansas state university... i'd know more if it was feasible for me to actually be GOING there opposed to a community college.

There are tons of big colleges in my area that offer some kind of equine program, whether it is competative or just for learning things like rodeo and show programs. West Texas A&M University and Oklahoma State University both have equine programs, I think.

Here is a site with a list of colleges with equine programs but I have no idea what any of them are like.

Tarleton State in Stephenville, Texas has a good program and TCU in Ft. Worth won the women's NCAA Championship last year.
