Yes there is a term for it and can be seem mostly in Polo.

To the OP..the odds are you are riding the canter as if it is a forward back motion but it is more lateral and if you think riding the side the lead is one forward and letting the rest of you follow you may have better success.

I have the same problem: with certain horses. For me it depends on the horse's lope, sometimes I'm lofted in the air completely and other times its like riding butter, so it may just be your horse too. :) For the longest time I thought I was doing something wrong but in reality to a degree it wasn't really me.

I have actually found that I sit the canter much better bareback than I do with a saddle. But I am more comfortable doing everything bareback so it's probably just me. :P It could also be the horse you are using. While I was horse shopping I tested this Thoroughbred gelding and when it came time to canter he had massive strides and basically flung me every which way. Very hard to sit. When I ride my arab though, she has a very floaty and rocking horse canter. It is actually quite calming to ride her canter. It's like sitting in a rocking chair.

It could be a lot of things. Like the others have said, a video would help greatly.

How much do you actually bounce? Sometimes it just feels like you are but you are not.

Drop your stirrups a little, let your weight sink down and lean back a bit. Try slowing his canter down, it will be easy to sit it when slower, and then you can get used to it when you speed up.
