A ton of onion soup with cheese on top? With a side of grilled cheese sandwiches, orrrr I think you may be able to make some sort of a cheesy dip too.

I'm thinking now something liked baked gnocchi and cheese. I've never baked gnocchi, but it's a family favorite just cooked in sauce. Baking with cheese could be fun. I can add veggies like with mac and cheese. And I also don't have to worry about making tomato sauce. And I can use sweet potato gnocchi to get more veggies in there.

I like leeks au gratin - in fact, made some tonight. Good with any cheese, but even better with some good cheese. Really just leeks with a basic white (béchamel) sauce with added cheese(s) and cracker crumbs on tops baked in the oven. I've also done this with a variety of vegetables, such as broccoli, cauliflower, etc. My family loves it every time.

@ACinATX , this is very naughty I know... but my DH thinks you need a new husband! He says, "What's wrong with him? What does he mean, no pizza? And what's wrong with zucchini?"

One favourite thing I like is Eggplant Parmigiana - grilled eggplant slices interspersed with tomato-basil sauce and mozzarella slices (you can spread out grated stuff), layered like a lasagna, with parmesan on the top of the last eggplant layer. Yum yum. Serve with crusty white Ciabatta with nice extra-virgin olive oil, and a garden salad. For afters, strawberries heated up in red wine with a bit of sugar in it, served at room temperature with a dollop of thickened cream on top!

I hate these kinds of threads. They always make me drool!


I dearly love zuchini. So versatile. Has he ever tried zuchini spiralized into 'noodles', then stirfried, with garlic and onion, mushrrom, whatever, basil, parmesan cheese and whatever. That vegetable is just like real pasta!!!


I'm frying up onions, musrooms, roma tomatoes, zuchini, garlic, red wine and parmesan cheese, as I write this. Then, fry meat balls seperattely, with some bottled red sauce and pasta . yum!

All of this is sounding delicious. I should have a culinary tour of America and invite myself to all y'all's places.

@tinyliny , I'll have to try that sometime. Something similar and ready-made by nature that we've grown here is Spaghetti Squash. It's a lot of fun - just bake the thing, then take the flesh out with a fork - it naturally separates into "spaghetti"...'
