I've mostly turned desserts over to my child. He does a really good job with them but lately when I can't sleep my goto has become cooking and since it isn't meal time dessert is ideal.

Last night it was pork chops, corn on the cob and a mixed salad here at my house. Tonight is probably homemade venison sausage and red potatoes as I have to be in town for some stuff until later so I need something I can do quickly when I get home and I have the sausage already made up and in the fridge. If I don't have to ride for work today I was thinking about riding this evening so I need something I can do quickly when I get home and the kids can serve themselves while I go ride.
Anything worth doing, is worth doing well.
Tonight we are having chicken, salad, green beans and fresh homemade bread. Chicken will be cooked on the grill.
Last night did pork chops on the grill had coleslaw & corn on the cob. That is what kids and husband had. I just had a salad with mixed greens. Can't eat pork it makes me violently sick.

@rambo99 , I feel your pain. Pork used to give me migraines of epic proportions. Tonight will be black beans and sausage with an avocado served topped with pico de gallo. No left over pie. :(

I love this thread! I am doing pollo con arroz with queso. One of the local Mexican places makes some and it's delicious so trying to make it myself.

DH picked the menu...off of cooking shows and FB...lol. Cajun cornbread casserole and tomato salad. I grew everything in the tomato salad(tomatoes, basil, rosemary, mint).
I don't break horses, I FIX them!
I can't, can't, can't wait to get back home. (Well, get home and immediately leave again. Sigh.) Found a bunch of recipes I want to try. Although I must conquer my fear of the stove, haha. I'm more of a baker thus far.
Last night was left overs. Night before I took out pizza dough (we premake and freeze) and made pizza. The night before that I made vegetable Lo Mein and Gen Tso chicken. Egg Rolls were store bought and I fried them myself. The kids all decided it was the devil's food and swear their digestive tracts have not recovered. I think they are still suffering the after effects of camp food or just had their hearts and stomachs set on chicken fried rice... There were way too many noodles in the fridge from other meals for a rice dish. Haven't decided on tonight's fare. It may well be a freezer hunt. Don't know if I should make spicy peanut chicken or not later this week with the way the other turned out. Plenty of avocados getting ripe and melons and figs that need to be picked so will also be making guacamole and baking at some point. Looking forward to cantaloupe pie and fig bars. Or biscuits and fresh preserves...
