Ive never been a wintec fan so I cant comment too much about that. How much is this saddle you want?

Your best bet- call the tack shop see if someone can bring some saddles out and help you find the right one. Or call a saddle fitter. I wouldnt get set on one specific saddle, based on something you read on the internet. I would try a bunch of saddles and compare them for the best fit overall.

I have a Wintec Wide and though i would prefer a leather saddle [and plan on investing one when he is older] it does the job and suits him perfectly as he is growing older and changing shape. It has CAIR and adjustable gullets so as the saddle changes shape to fit the horse [and as the hores gains muscle and changes shape] the saddle can be adjusted or adjusts naturally to fit the horse.
But, if you do decide to invest in a Wintec GET IT FITTED. Very, very important. Just because it has the adjustable gullets and CAIR system doesn't mean it shouldn't be checked. (:

FYI. The gullet changing system changes the gullet- not the whole channel.
