Equine schools in europe?

Hi everyone. So I am Polish/Czech, and my mother was a rider in poland, henceforth she knows many olympic level riders in Poland. I was planning on going there for a summer primarily to go ride and expand my experience and knowledge of horses, plus to see family and explore somewhere other than america. I was born there but have not visited so this will surely be an experience. I know that this will be somewhat of a "camp" but I am so dedicated to horses, more than I show, and I KNOW I will go to the olympics one day, I'm sure of it. In a year or so, I know I'll also be able to afford to go to a school like that in europe, so thats not the problem.

I was wondering if anyone knew any schools specifically designated to learning about equines including all the basics (not just riding) and If I could have more information? I would like to go to an art school, was even considering going somewhere like Paris since most careers are guaranteed there, but aside from art and fashion, my dream is and always will be to work with horses no matter what.

Let me know if you now anything! :)
