Hmmm...Since this is a fantasy thread, these are the ones I'd bring back from the dead:
My sister's grade pinto mare, Joey, that pretty much taught me how to ride.
Dixie my first pony. I rode the hair off of that pony and I don't think she or I knew the meaning of walk.
Star a retired barrel racing mare and the first horse I bought as an adult and out on my own. Every one that knew her pretty much hated her because she was a hot headed b. but her and I just clicked and I loved that mare. I hung out at the horse farm where she was being used as a broodmare and one day after she kicked Mrs. farm owner she told me to buy her and get her off the place or she was going to the sale barn. LOL
Gracie, I bought her as a yearling from the same farm as above. She was such a sweet mare and I used her for my "anyone can ride" horse. She gave me 4 sons over her lifetime and I still have 3 of them because I can't stand the thought of letting them go. The only reason I sold her #2 son was because I let a friend talk me into letting her buy him. He'll live out his life on her place being well loved and well taken care of.

Cherokee...I called her the little pony that could. She was gaited and I actually bought her to put some time on her and resell but she wormed her way into my heart and became a permanent resident.
This is the only picture of her that I have a quick link to. She's the one in the fly mask with her filly standing behind her.
And while I'm at it, I'd turn back the clock for JC. My vote for the BEST HORSE EVER. He was Star's last foal and he's 28 now and retired. I've lived with him longer than any other creature, man or beast. We've covered a lot of trail miles together.
In his younger years (I think this was taken when he was about 18. LOL) He's on the right and that's Gracie's #1 son on the left.
