Thanks everyone. Like I said, it's not really going to affect how his training will go, I was just wondering if there are really telltale signs for my own curiosity. Of course primary goal #1 will continue to be working on making him less reactive and willing to bolt. Sometimes it's two steps forward, one step back, but we're gradually making progress.

I have had several arabs and both very very sensitive to the use of the lunge whip and by that I mean even just holding it toward then. Neither could stand a sweat scraper - skin too sensitive. Neither like sounds up and behind then like slapping a glove on the saddle. Once I'd figured their dislikes there was nothing flighty about them. Bolting means you and the horse are out of control. If he's taking off at the canter he may be having trouble balancing the weight of a rider and tack and that can frighten a horse.
