Just another anecdote: one of my friend's horses lost her eye after a roping accident, the rope snapped and took out her eye. After the initial recovery the horse was just the same, in fact they used her to teach their daughter to rope and hauled her to rodeos etc and you would never know by looking (other than the giant hole where the eye should be.)
