So I have a coming two year old mustang that I've been working with quite a bit. He's been coming along really well, and I'm thinking I'd like to get him a "practice" saddle just to strap on his back while I'm puttering around with basic groundwork. I pretty much want the cheapest old thing I can find, but I wanted to know... does the fit of the saddle matter terribly if I have no intentions of actually starting him in it? I'm not going to get something that obviously pinches his shoulders, but I may not find something that suits him like a glove either... especially considering that he's still going to be growing and changing quite a bit.

You might consider using a bareback pad to start with. They aren't done up real tight and it will get him used to having a cinch. It's flexible, no pinching. You can also get him used to swinging the saddle pad onto his back and can then use it under the pad, or not.
