This morning I noticed that our mare left her hay and went to a muddy area of her paddock, dug a hole and started eating the dirt. She is on grass/timothy hay, SafeChoice, and has access to a trace mineral block. She is looking great and her coat is smooth and shiny. I'm guessing she might be deficient in something but not sure what.

Any suggestions?

I would analyze everything if you really want to be sure and not take a shot in the dark. Pasture/hay testing is free through the state agriculture extension service. Look at that analysis in combination with what else you are feeding.

Another option is that you can send in serum to a veterinary diagnostic lab and they can tell you what the levels are of various minerals and if the horse is lacking. Where I work (arkansas state veterinary diagnostic lab) a trace element panel is only twenty dollars so it's a pretty easy way to take a look.
