A friend of mine is a saddle bronc rider, first pro female one. She goes to bronc riding school every off season, she travels to Texas usually, she is at the gym everyday. She broke her neck too a few years ago, rehabbed and back at it.
I would suggest a bronc riding school, then you can decide if you want to break your neck with a saddle bronc or a bareback one
This is her, she has a YouTube channel where she discusses bronc riding
