For hunters and eq over fences, I tend to hunch my shoulders over the jump. I keep my shoulders back up to it but when my pony takes off my shoulders go forwards.
Also, how are ways I can dip my back while being in two point? When my shoulders ARENT hunched, my back still tends to arch. How can I work on fixing this?

If I understand your question: think about strengthening your core instead of what you're doing with your back and shoulders! Make your abs strong over the jump and that should help you keep your upper body in place. But then again, I'm not a jumper these days, so take my advice with a grain of salt!
