Unfortunately, however annoying the woman is, "spying" on you is perfectly legitimate if you are only leasing. Is it a full lease or a partial lease (meaning does she still have the option to ride the horse, or is it basically all yours)? If its a partial lease she has more rights and I would definitely expect her to come out and see her horse every day, if not at least every other day. If its a full lease and the horse is basically yours, then she's probably just being paranoid, and she might not even come out to see the horse as much as you say.
